This lot was produced by Don Sabino Micromill, a family-run project operated by Steven Vargas and his father in the hills of Costa Rica’s Central Valley. Though modest in scale, the mill has become known for its careful processing, varietal diversity, and meticulous attention to detail across multiple family-owned plots.
This natural processed Catuai comes from Finca La Roca de Poás and offers a rich, rounded profile with notes of cooked cherry, milk chocolate, and pecan. A boozy acidity and mellow fruit sweetness give the cup depth while maintaining balance and clarity.
