Sourced through Coocentral and Nordic Approach, it reflects decades of experience and a deep focus on clarity in the cup. Javier, who has been farming coffee for nearly fifty years, works with careful picking cycles and precise fermentation processes to create coffees with sweet and clean profiles . This coffee underwent a relatively long, 36 hour fermentation, before it was eventually washed and slowly dried on covered, raised beds.
In the cup we find a soft and balanced profile, with red fruit and plum layered over a brown sugar sweetness, finishing with a gentle herbal, tea-like character. It’s an approachable and versatile coffee—equally suited for filter and espresso.
